Buckeye Cookies
Buckeye cookies are a simple no bake cookie. They are peanut butter balls made to look like Buckeyes by dipping half of the ball into melted chocolate. We are from Ohio, the Buckeye state, so it's a very fitting cookie for the holidays around here. The combination of the peanut butter and chocolate taste like a Reese's cup. Try using dark chocolate for an even better taste. Buckeyes are easy to make, roll into balls and dip in melted chocolate. This Buckeye cookie recipe makes about 5 dozen cookies. Ingredients;
Melt butter or margin, in mixing bowl combine peanut butter, vanilla and confectioner sugar. Dough should have the consistency to form one inch balls. Melt chocolate and paraffin in double boiler while making peanut butter balls. Insert toothpick into balls and dip in melted chocolate. To make the cookie look like a Buckeye, do not cover the top of peanut butter ball with chocolate. Place cookies on wax paper and cool in refrigerator until the chocolate hardens.
