Linguine Salad

This cold pasta salad is not only easy to make, it's good on it's own or paired with another entree. When you make it, be sure to make enough for left overs.

I love left overs! I love to pull left over roasted chicken or fried chicken out of the refrigerator along with a salad, no prep.......... no cooking...............no mess.

We recently rented a cabin around a state park. When we go on these mini vacations, we don't want to eat in restaurants or do a lot of cooking. We want to be outside, hiking, biking, canoing and any thing else the out doors has to offer.

We prepare dishes ahead of time, pack the cooler when we pack the suit cases. During our vacation we have great tasting food that we can eat on paper plates, on a picnic table, no prep........no cooking...........no mess. This gives us a chance to explore and relax.

You can use any type of pasta, I prefer linguine. This recipe will make 8 full servings or a lot of side servings.

Cold Pasta Salad Ingredients

  • 1 Pound Linguine
  • 12 Ounces Italian Salad Dressing
  • 1/2 Bottle of McCormick Salad Supreme
  • 1 Onion (Chopped)
  • 1 Tomato (Chopped)
  • 1 Cup Sliced Mushrooms
  • 1/2 Cup Green Bell Pepper (Chopped)
  • 1/2 Cup Black or Green Olives (Sliced)
  • 1 Cup Broccoli (Chopped)
  • 1 Cup Cauliflower (Chopped)
  • 1 Cup Carrots (Chopped)

Cook pasta, rinse, add vegetables, seasoning and dressing. Make a day ahead. Salad will keep for several days.

You may add or subtract any of the vegetables to your taste.
