Crawfish Chowder
Crawfish Chowder is a New Orleans dish that will warm you up as the long cold winter comes to an end. Best of all, you won't need a specialty store for the ingredients, your local Walmart should have everything you will need. If the thought of crawfish chowder turns you off, hang on a minute. If you have never tasted crawfish it tastes similar to a shrimp / lobster combination. If you're still not sold you can substitute shrimp, your favorite fish, clams, mussels or oysters. You'll find the crawfish in the frozen seafood section at Walmart, it comes in a 12oz bag for around $6.00. It's good with corn bread muffins, try the Martha White brand that comes in a bag for around $.69, just follow the directions on the pack. Try adding a little more sugar to the muffins, the sweetness of the muffins complements the spiciness of the chowder. Now sit down for a yummy warm meal. You won't be disappointed. Recipe: Makes about 4 bowls.
1. Clean potatoes and cut into 1/2 inch pieces. I prefer to leave the skins on. 2. Add cut potatoes to chicken stock in small stock pot and cook until tender. (About 25 minutes) 3. Dice onion and celery and sautee' with butter in large skillet until tender. 4. Add onions and celery to stock pot with potatoes. 5. Add the crawfish tail meat. 6. Add cajun seasoning to taste. 7. Let simmer for about 20 minutes. The starch from the potatoes will thicken the chowder. 8. Add the whipping cream and you are ready to eat some delicious crawfish chowder!
