Irish Stew RecipeThis Irish Stew recipe is a favorite of ours on St. Patty's Day, highlighted with a green mashed potato ring that makes it even more festive! This is a simple recipe that can be made in about 45 minutes and slow cooked for about 3 hours. It can easily be made ahead of time and re-heated when the party begins. A loaf of fresh Italian bread is great to dunk into the stew. The only kitchen utensil you may not have is a pastry bag for the mashed potato ring. Your local grocery should carry them. I
checked at Walmart and they have one for less than $4. It's re-useable with several different style tips so you can get creative
with cookie and cake decorating as well.
Irish Stew Recipe: Makes about 4 bowls.
1. Cut stew meat into 1/2 inch cubes. 2. Brown stew meat in heavy skillet. 3. Bring beef stock to a boil and add browned stew meat. Reduce to low heat and cover. 4. Dice onions, celery and carrots. 5. Sautee onions, celery and carrots with butter in large skillet until tender, add to beef stock. 6. Clean potatoes and cut into 1/2 inch pieces. I prefer to leave the skins on, add to beef stock. 7. Let mixture cook on low heat for about 3 hours in a covered pot. 8. If sauce is not thick enough after cooking, mix corn starch with warm water and add to stew. 9. Add green peas to stew. 10. Boil 2 cups water in small sauce pan, add instant mashed potatoes, butter, salt and pepper to taste. 11. Add green food coloring to mashed potatoes, stir well and let cool a few minutes. 12. Place mashed potatoes into pastry bag and squeeze onto edge of serving bowls. 13. Add Irish Stew to serving bowls and let the party begin!
