Meatloaf Recipe

This meatloaf recipe is just a basic meatloaf. The brown sugar topping is what makes the meatloaf taste a whole lot better. I believe most men are suppose to dislike meatloaf, but not Greg, he especially loves cold meatloaf sandwiches.

Meatloaf Recipe

  • 2 Pounds Ground Beef
  • 1 Medium Onion
  • 1 Medium Green Bell Pepper
  • 1 Egg
  • 1 Cup Bread Crumbs
  • 1/2 cup ketchup
  • Salt, Pepper and Garlic Powder to Taste
  • Butter or Vegetable Oil to Saute Onion and Bell Pepper

Meatloaf Topping

  • 1/2 Cup Ketchup
  • 1/2 Cup Brown Sugar

Dice onion and green bell pepper, saute in a large skillet until carmalized.

In a large mixing bowl add ground beef, sauted onions and peppers, egg, salt, pepper, 1/2 cup ketchup and enough bread crumbs to hold mixture together.

Mold the meatloaf into shape and place in deep sided baking pan.

In a small mixing bowl add 1/2 cup ketchup and brown sugar to make the topping, mix together.

Spread the ketchup and brown sugar mixture over the top and sides of the meatloaf.

Bake uncovered at 350 degrees for about 1 1/2 hours.

As an extra bonus, I like to cut potatoes in large chunks and place in pan surrounding the meatloaf, drizzel some of the topping over the potatoes. The potatoes act like a sponge and soak up the drippings from the meatloaf creating very tasty potatoes.

If potatoes are added, bake covered for an hour, uncover the last half hour to brown potatoes and meatloaf.
