Penne Pasta with Italian Sausage The thing about penne pasta recipes, they are very versatile, this one is no exception. The base of this recipe is simple, penne pasta, onions, bell peppers, garlic and tomatoes. You can add any type of meat, seafood or additional vegetables you may like into the mix, or just leave it as is. My favorite is adding sweet Italian Sausage, however, our daughters favorite is adding chopped grilled chicken breasts. Sometimes we mix the two together and have both the Italian Sausage and chicken breast. Another of our favorites is to make a veggie pasta throwing in a bag of mixed frozen veggies such as carrots, broccoli and cauliflower. Adding shrimp, crawfish tails, mussels or beef tips is pretty tasty too! Penne Pasta Recipe:
This is an easy dish to put together and only takes about 30 minutes to make enough for 2 servings. 1. Heat a heavy skillet (I prefer my 12 inch cast iron skillet) on the stove, medium heat 2. Cook penne pasta in a separate pot, rinse and drain 3. 1/2 onion and 1/2 bell pepper cut into thin slices 4. Place sliced onions and bell peppers into skillet with butter or olive oil 5. Let onions and peppers cook until caramelized (brown) stirring occasionally 6. Add Italian Sausage and cook until done 7. Add canned tomatoes, juice and all, in skillet and let cook about 5 minutes 8. Add cooked penne pasta in skillet and blend together 9. Sprinkle with cajun seasoning and stir 10.
