Fresh cucumber slices are a tasty, easy to make sweet pickle recipe.

We all have our Great Aunt Helen that creates magic with everything she cooks. Or Aunt Olga that makes desserts to die for.

This is just one of the many recipes that will be included on this sight that were Great Aunt Helen's and Aunt Olga's recipes.

These cucumber slices are sweet pickles with onions and bell peppers added to give them even more flavor. They are good when eaten on their own, or give added flavor and crunch to salads and sandwiches.

Placing these cucumber slices in small jars with a ribbon tied around the lid makes a yummy home made gift.

They are easy to make, but give them 24 hours to pickle before eating them. Green, red and yellow bell peppers give them color. Red and yellow bell peppers can be expensive and are optional to use. Green bell peppers along with the onions and cucumbers are all that are required.

Pickle Recipe:

  • 6 Cups Thin Sliced Cucumbers
  • 1 Cup Thin Sliced Onions
  • 1 Cup Thin Sliced Bell Peppers
  • 2 Cups White Vinegar
  • 4 Cups Sugar

Place sliced cucumbers, onions and bell peppers in wide mouthed 1/2 gallon jar.

Mix sugar and vinegar in a small sauce pan and heat solution until sugar is dissolved and it begins to boil. Pour over cucumbers, onions and peppers. Cover jar with saran wrap and loose lid. Refrigerate for 24 hours before eating. More cucumbers along with vinegar solution can be added as needed.
