Potato Salad Recipes

potato salad recipes I'd like to share one of our family's favorite potato salad recipes. It has been changed and doctored a bit over the years by different family members, but is still the most requested recipe at picnics and parties we attend.

Potato Salad Ingredients

  • 6 Medium Red Skinned Potatoes
  • 3 Hard Boiled Eggs (Diced)
  • 1/2 Medium Sized Green Pepper (Diced)
  • 1/3 Cup Diced Sweet or Dill Pickles
  • 2 Cups Miracle Whip
  • 3/4 Cup Italian Salad Dressing
  • 1/3 Cup Pickle Juice
  • 1/2 Cup Sugar
  • 1 Tablespoon Celery Seed

Cut potatoes into 1/2 inch cubes and boil in water until tender (about 25-30 minutes). I like to leave the skins on for color and it's also a lot easier than peeling all the potatoes.

While the potatoes are cooking add the Miracle Whip, Italian dressing, pickle juice, sugar and celery seed into a mixing bowl and mix together. You should have a sweet and sour sauce, the tang from the Miracle Whip and Italian dressing blended with the sugar. Adjust ingredients to suit your taste.

In a separate mixing bowl add the hard boiled eggs, green peppers and pickles. When the potatoes are fully cooked drain and let cool a bit, add to mixture when still warm so the potatoes absorb the flavor of the sauce.

Stir the sauce into the mixture until all the ingredients are covered. Place in serving bowl and put in refrigerator to cool.

Serves 6 to 8 people.
