Tilapia Recipes

What's on the menu for dinner tonight? This is one of my favorite Tilapia recipes, Cajun spiced Tilapia fish, topped with sauteed onions, bell peppers and diced tomato mix. Finished with shredded cheddar and mozzarella cheese, melted under the broiler.

Served with buttery seasoned potato wedges, french cut green beans and completed with sweet corn muffins. This dinner for two only takes about 45 minutes from start to the dinning table.

Ingredients for Cajun Spiced Tilapia Fish;

  • Two Pieces Tilapia Fish
  • Cajun Seasoning
  • 1 Medium Green Bell Pepper
  • 1 Medium Onion
  • 1-12oz Can Diced Tomatoes
  • 1/2 Cup Shredded Cheddar
  • 1/2 Cup Shredded Mozzarella
  • Butter

Cut onions and peppers in long strips, saute in butter until carmelized, add diced tomatoes and saute until juices have evapored, set aside. Dust both sides of the Tilapia with Cajun seasoning, saute in butter until fish flakes, browning both sides. Shred cheddar and mozzarella cheese while fish is sauteing, set aside.

When fish is done sauteing, top with onion, pepper and tomato mix, add cheese shred, place under broiler until cheese is melted.

Potato Wedges;

  • 3-4 Medium Size Potatoes
  • Butter Flavor Cooking Spray
  • Salt and Pepper to Taste

Clean potatoes, poke each potato with a fork or knife. Place in microwave for 8-10 minutes or until tender. Slice in quarters lengthwise; place on cookie sheet and spray with butter flavor cooking spray; season with salt and pepper. Place under broiler to brown, about 10 minutes.
